Sugar was the engine of the Atlantic slave trade: the demand for cheap sugar in European markets was the direct economic rationale for the plantation system. Plantation monoculture permanently reshaped Caribbean and Brazilian economies, demographics, and ecologies. The sweetness in European kitchens was paid for in the Caribbean. That balance sheet has never been settled.
