Context
Sushi exists because of vinegar. The original technique packed fish in fermenting rice to preserve it, and the rice was thrown away; only later did seasoned rice become the point and the fermentation get compressed into a splash of vinegar. So the dish is named after a souring process it no longer performs. Rice vinegar is the surviving trace of what sushi used to be.
