Rite
Cucumbers are pickled in Eastern Europe as an act of winter insurance and household identity, jars put down each autumn to a family formula, and in Russian and Ukrainian practice the brine itself is drunk as the standard cure for a hangover. Rassolnik is a soup built from it. A vegetable that is mostly water became a way of holding a season, and its liquid became medicine.
