Labneh balls are rolled and dropped into oil to keep through the year, a Levantine household's dairy insurance, and the straining cloth hanging over the sink is one of the standard domestic images of the region. It is breakfast with olive oil and za'atar, which makes it the first thing eaten in a great many houses. A cheese made by taking water out is how a hot climate kept milk.
