dukkah

The word means to pound, which is a name describing the method rather than the result.

Cultural layer

Origin
Egypt; duqqa, a coarse blend of toasted nuts, sesame, coriander and cumin, pounded rather than ground so it stays rubbly
Routes
An Egyptian street and household mix eaten with bread and oil; carried into Australian and British restaurant cooking from the 1990s, usually without the bread-and-oil ritual that gave it its form
Context
Dukkah is built to be dipped into: bread, then oil, then the dry mix, in that order, standing up, from a shared bowl. Its texture exists because it is picked up by a wet piece of bread. Sprinkled over a plated dish as a garnish it still tastes of itself, but the reason it is coarse instead of fine has been discarded. The word means to pound, which is a name describing the method rather than the result.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
