Rite
Yoghurt is a starter passed between households, which makes it a genealogy: a culture kept alive for decades by continuous feeding, carried when families moved. Turkish and Balkan tradition treats lending a starter as an obligation rather than a favour. Metchnikoff attributed Bulgarian longevity to it in 1907 and effectively invented the modern probiotic industry from a village practice. A living thing that must be given away to survive is a good model for a food tradition.
