Context
Urfa is not dried so much as cured: a week of sun by day and wrapping by night, which stops the chili short of brittle and leaves it soft, dark and raisiny. That alternation is the whole product, and it is labor, repeated daily, by people in a Kurdish-majority region whose name rarely travels with the spice. The jar says Urfa. It could say more.
