Context
Bulgur is older in the Levant than rice, and it is precooked, which means the work happens once at the harvest and not again at dinner. Kibbeh and tabbouleh are built on it, and tabbouleh in particular is a parsley dish that the export version turned into a grain salad. Bulgur was a staple before it was a health-food shelf item. The grain did not change; the shelf did.

Rite

Bulgur is boiled, dried on a roof and cracked, and in Levantine villages that was a communal week: women working together, the grain spread over flat surfaces, the year's supply made at once. Kibbeh made from it is the dish a household is judged by, pounded to a texture that announces skill. Machine bulgur ended the roof-drying and the gathering with it.
