Rite

Parsley belongs to the dead in Greece and to freedom at Passover. Greek graves were planted with it and a dying person was said to have need of parsley, so it was unlucky in the house. On the seder plate it is karpas, dipped in salt water for the tears of slavery. The same herb that garnishes a plate carries a funeral and an exodus, depending on whose table it is on.
