Context

Chermoula is a coastline's answer to a fish that must be eaten today. The acid and the herbs do two jobs at once, seasoning and holding, which is what you build when refrigeration is not the assumption. Every family has proportions, and the version sold in a jar has to pick one and call it the recipe. The jar is fine. It is just one household's chermoula, standing in for all of them.
