Rite

Hungary made a New World chili into a national identity, and the Szeged and Kalocsa growing regions carry protected status. Paprika arrived through the Ottoman advance, which means Hungary's most patriotic ingredient came with an invasion, and it took until the nineteenth century to become the emblem it now is. A grinding technique for removing the hot seeds made the sweet grades possible. National flavours are often recent and usually arrived with someone unwelcome.
