Rite

Pythagoras forbade his followers beans, and nobody has settled why: the reasons offered run from the souls of the dead residing in them to the plain fact that favism can kill. Rome fed favas to ghosts at the Lemuria, the head of the household spitting them over his shoulder at midnight for the spirits to take. In Sicily they are Saint Joseph's beans, credited with ending a famine and still carried in a pocket for luck. Few foods have been simultaneously banned, offered and pocketed.

Pixian doubanjiang is fermented broad bean.

Mechanism · microbial

Doubanjiang is not a sauce the bean is added to, it is the bean. Broad beans ferment for months in earthenware crocks, erjingtiao chillies ferment separately, the two are combined and left for a year or more, up to eight. The fermentation breaks the bean protein down into free amino acids, which is where the savour comes from: the same reason long-aged cheese tastes of more than milk.
