Doubanjiang arrived in Sichuan via the Columbian Exchange, the chili component entering China through trade and quickly embedding itself into Sichuan fermentation traditions. Like gochujang and harissa, a foreign ingredient became so culturally foundational that its foreign origin became irrelevant within generations. Pixian doubanjiang, produced in a single county with specific local conditions, has geographic indication protection: this is not a generic ingredient but a place-specific fermented tradition. The 'soul of Sichuan cooking' is a New World import.

Pixian doubanjiang is fermented broad bean.

Doubanjiang is not a sauce the bean is added to, it is the bean. Broad beans ferment for months in earthenware crocks, erjingtiao chillies ferment separately, the two are combined and left for a year or more, up to eight. The fermentation breaks the bean protein down into free amino acids, which is where the savour comes from: the same reason long-aged cheese tastes of more than milk.
