Chimichurri is inseparable from Argentine asado culture: the gaucho cattle-herding tradition of the Pampas produced a grilling culture, and chimichurri was the sauce built for it. Its ingredients, parsley, oregano, garlic, and red wine vinegar, reveal the Spanish and Italian immigrant influence that remade Rio de la Plata foodways from the late 19th century onward. Rite

Asado is a role before it is a meal. The asador tends the fire alone, works to embers rather than flame, and serves in a fixed order to a table that has gathered for the afternoon, and Sunday asado organises the week across Argentina and Uruguay.
