Chaat masala is inseparable from Indian street food culture: chaat is public eating, democratic, cross-class, sold from carts in every Indian city with a vendor's specific hand. The blend's sulfurous black salt (kala namak) gives it a flavor profile that challenges Western palates trained to expect different textures of seasoning. This is the point. Chaat masala was not designed for a Western palate. It was designed for the street.
