Rite

The pomegranate is counted into the rites of everyone who grows it, and its reduction carries the fruit into the year. At Yalda, the Persian longest night, it is eaten for the return of the light; fesenjan, thickened with the molasses and walnut, is the dish of celebration. The syrup exists because the fruit does not keep. Concentrating a rite into a bottle is how seasonal ceremonies survive the rest of the calendar.
