feta

Worth noting which way this machinery points: it was available to Greece and is available almost nowhere for the foods this archive spends most of its time on.

Cultural layer

Origin
Mainland Greece and Lesbos, which is the boundary the designation actually draws; brined white cheese with production traditions spanning millennia, made from sheep milk or sheep with up to thirty percent goat, protected since 2002
Routes
Greek pastoral tradition, Balkan variations, EU Protected Designation of Origin (only Greek-made can legally be called 'feta' in the EU)
Context
The feta fight ran for a decade and the archive should name the dates properly: registered in 1996, annulled in 1999 when Denmark, France and Germany argued the word had gone generic, re-registered in 2002 and finally upheld by the Court of Justice in 2005. What the Court accepted was that consumers across the Union associated the name with Greek territory and tradition, so Danish producers had to stop using it. A cheese made in Denmark is not, by definition, the same as a cheese made in Greece. Worth noting which way this machinery points: it was available to Greece and is available almost nowhere for the foods this archive spends most of its time on.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
