Rite

In Vietnam the household fish sauce is the measure of the house, and each family keeps a preferred maker and grade the way others keep a wine. Nuoc cham is mixed at the table to the eater's own balance. Colonial and later Western accounts described the smell as evidence of backwardness while Rome had built an industry on the same ferment. The judgement was never about the fish.
