Context
Belimbing wuluh is a souring agent that grows in the yard, which is the whole reason it never became a product. It goes into sayur asem and into sambal, doing the job tamarind or lime does elsewhere, and it does it with something neither can. An ingredient that cannot survive a truck stays in the cuisine that has a tree, and the global pantry never learns the taste exists.
