Context
Colonial interest in lemongrass was entirely utilitarian: essential oil for perfume and insect repellent, not food. Its presence in Western kitchens traces a different route entirely, through post-Vietnam War refugee and diaspora migration into the United States, Australia, and France. Lemongrass reached the West twice: first as a colonial extract, then as a refugee ingredient. The second arrival is the one that matters.

Rite

Lemongrass is planted at the boundary of a compound across Southeast Asia to mark it and to keep snakes off, and it appears in Thai and Khmer offerings and in the water used for ritual bathing. It is not chewed or swallowed in most dishes: it is bruised, steeped and removed. An ingredient designed to be taken back out again is closer to incense than to a vegetable.
