kemangi

Some foods are local because the market cannot move them fast enough.
freshsweetveganvegetarian

Cultural layer

Origin
Indonesia; lemon basil, Ocimum africanum, softer and more citrus than Thai or Genoese basil, eaten raw
Routes
Grown across the Indonesian archipelago and eaten as lalapan, the raw vegetables served alongside a meal; rarely exported, since the leaves wilt within a day
Context
Kemangi is served raw and uncut, in a pile beside the rice, and eaten by hand with sambal. Lalapan is not a salad and not a garnish: it is a whole category of the meal that Western menu structure has no slot for, so it gets translated as vegetables on the side. The leaf lasts about a day after picking. Some foods are local because the market cannot move them fast enough.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
