Rice reached the American South through the knowledge of enslaved West Africans, not through European agricultural science. Carolina Gold rice cultivation required tidal irrigation expertise that came specifically from rice-growing regions of Senegambia and Sierra Leone. This means the American rice economy was built entirely on African intellectual and physical labor, and the debt to that knowledge has never been acknowledged.

Rite

In Japan rice is not a food category but a self. Shinto offers it to the kami as the first fruit, the emperor plants and harvests a ceremonial paddy, and the word for cooked rice also means meal. Wet-rice agriculture organised the village, the calendar and the state, so an argument about rice imports has never been only about trade. Elsewhere it holds the same weight in different hands: Dewi Sri is the Javanese rice goddess, and rice is thrown at weddings across the world to mean fertility.
