Rite

Mole is made for occasions and by committees. A wedding, a baptism or a saint's day mole runs to dozens of ingredients and takes days, and it is cooked collectively by the women of a family, which makes the labour itself the offering. In Oaxaca and Puebla the recipe is a household inheritance. A sauce that cannot reasonably be made for one person is by design a sauce that requires a reason and a crowd.
