Cheesemaking arrived with Spanish colonisation, since Mesoamerica had no dairy animals, and was rebuilt locally into fresh cheeses unlike anything in Spain
Context
Queso fresco exists because of a colonial import, and it is not a Spanish cheese. Mesoamerica had no cattle until they were brought, and the cheeses that followed were made fresh, salted and eaten immediately, in a climate that ruled out European ageing cellars. That is adaptation rather than adoption. The technique came from outside and the cheese did not.
