Context
Rocoto is the chili that would not travel: Capsicum pubescens does not cross with the species the Columbian Exchange scattered, so while ají amarillo boarded ships, rocoto stayed in the valleys that bred it. Arequipa stuffs it whole with beef and queso fresco and bakes it: rocoto relleno, heat treated as architecture, not garnish. Some chilies are global because they adapted. This one is Andean because it refused.
