Rite
In the Popol Vuh people are made of maize, after gods fail with mud and with wood. That is not a metaphor about diet: it makes the crop the substance of the body, and the Maya calendar, the milpa and the household ran on that relationship. Corn Mothers and Green Corn ceremonies across North America carry the same understanding in different hands. A grain that cannot reproduce without human planting was understood as kin rather than as property.

Agronomic rather than chemical. The squash runs along the ground and shades out competition while the maize carries the beans, so the three are planted as one system. The pairing on the plate follows the pairing in the field.

Milpa, the Mesoamerican Three Sisters.
Maize protein is limiting in lysine and tryptophan; legume protein is limiting in methionine. Each covers the other's gap, so the pair gives an amino acid balance neither reaches alone. The milpa is that arithmetic, planted, several thousand years before anyone could write it down.

Succotash, a Narragansett dish.
The same complementarity as the milpa, arrived at independently in the northeast: maize short on lysine, beans short on methionine, succotash holding both. Narragansett practice, and the amino acid arithmetic agrees with it.
