Suppressed after the Spanish conquest, when its use in Mexica religious figures made it a target of colonial prohibition; survived in rural cultivation and returned in the twentieth century

Context

Amaranth was banned because of what it was used for. The Mexica mixed the seed with honey into figures for religious ceremony, so Spanish authorities moved against the crop itself, and a staple grain was pushed to the margins for centuries. It survived where the colonial administration did not reach. Alegría, the seed-and-honey sweet sold in Mexico now, is the ceremony still being made, under a different name.
