Context
Black beans and corn together form a complete protein, which is why the milpa, the three-sisters planting system, sustained Mesoamerican populations for thousands of years without requiring animal protein. Colonial agricultural disruption of milpa farming, replaced with export monocrops, did not just change what people ate. It removed the nutritional logic that had sustained them. This is what food sovereignty means in practice.

Milpa, the Mesoamerican Three Sisters.

Mechanism · nutritional

Maize protein is limiting in lysine and tryptophan; legume protein is limiting in methionine. Each covers the other's gap, so the pair gives an amino acid balance neither reaches alone. The milpa is that arithmetic, planted, several thousand years before anyone could write it down.
