Rite

Lobster was prisoner food. It was so abundant on the New England coast that it was fed to the incarcerated, to servants and to the enslaved, and Massachusetts indentured servants are recorded objecting to being served it more than a few times a week. Rail dining cars and scarcity turned it into a luxury within a century. Nothing about the animal changed. The story of what it was worth is entirely a story about supply and about who was eating it.
