Rite

Kimjang is the ritual and kimchi is the by-product. Whole neighbourhoods gather in late autumn to make the winter's supply together, the labour and the jars distributed along lines of family and obligation, and UNESCO lists the gathering rather than the dish. Households once buried onggi jars in the ground to hold temperature through winter. A vegetable preserved for a season became the reason a community assembles on a date.
