perilla oil

Export power selects for shelf life, and then calls the result a cuisine.
savourybitterfreshveganvegetarian

Cultural layer

Origin
Korea; oil pressed from toasted perilla seeds, deeply nutty and unstable, older in Korean cooking than sesame oil
Routes
Pressed in Korean households and local mills; poorly suited to export because it oxidises fast, which keeps it close to where it is made
Context
Perilla oil goes rancid quickly, so it is bought in small bottles and used fast, and that fragility is why it never became a global commodity. Sesame oil travels better, so sesame oil is what the world thinks Korean cooking smells like. The more fragile ingredient stayed home. Export power selects for shelf life, and then calls the result a cuisine.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
