Korea; sun-dried red chili, deseeded and coarsely ground, fruity and moderately hot rather than sharply burning
Routes
Chili reached Korea in the late sixteenth or early seventeenth century, most likely through Japanese and Portuguese trade; within a century it had rebuilt Korean food, and kimchi turned red
Context
Korean food was not red until roughly four hundred years ago. Kimchi predates chili by a long way, and it was white, pickled in brine. Gochugaru arrived through the same trade routes that carried colonial violence and became so central that it now reads as the national colour. Traditions are not old or new; they are made, and this one has a start date.
