perilla leaf

Cultural layer

Origin
East Asia; Perilla frutescens, used as green shiso in Japan and as the broader, flatter kkaennip in Korea, which are different cultivars used differently
Routes
Grown across Japan and Korea for centuries; carried into diaspora kitchen gardens, where it is often one of the last plants a family keeps growing
Context
Shiso and kkaennip get flattened into one word in English, and they are not the same leaf or the same job: one is torn over sashimi, the other is pickled in soy and wrapped around rice. Calling them both perilla is convenient for a supermarket and useless in a kitchen. The label serves the shelf, not the cook.

Route

Pending

The routes are written. They are not yet mapped.

This entry's cultural layer already names where it came from and how it moved. What it does not yet carry is that movement as structure: ordered waypoints with real coordinates, and a mechanism on each leg. Until it does, the layer stays an empty slot rather than a drawn line, because a map built from prose would be a guess with a projection under it.
