Rite
Pork is the most politically loaded meat in Europe, because refusing it was evidence. Under the Spanish Inquisition, converted Jews and Muslims were watched for whether they ate it, and cooking with pork fat in an open kitchen became a way to survive suspicion. Prohibition in Judaism and Islam made the pig a boundary marker, and Christian Spain turned eating it into a loyalty test. A chop was a confession.
