Context
Chipotle is a preservation method, not a flavour: ripe chilies smoked for days because that is how you keep a harvest without refrigeration. The word now sells sandwiches to people who have never met the chili, and means roughly smoky and vaguely Mexican. A technique became an adjective. The adobo is still made, and still takes days.
