Context
Douchi predates soy sauce, and the reason we can say so is that someone kept a list. Han Tomb 1 at Mawangdui near Changsha, sealed about 165 BCE, held fermented black soybeans with ginger in sealed pottery jars, itemised on the bamboo inventory strips that came with them. That makes douchi the oldest documented fermented soy food, and it unsettles the assumption that soy sauce is the original form. Culinary history tends to privilege whatever was most successfully commodified and exported. Douchi is older and less globally familiar because it was never industrialised for export.
