Context
Ají panca is the dark, fruity, almost chocolate register of Peruvian heat: dried, ground, and rubbed into anticuchos. The dish carries its own history: beef hearts were the cut left to enslaved Africans, who turned discard into the street food Lima now queues for. Afro-Peruvian cooks built the flavor the country now calls its own. The chili seasons the evidence.
