Rite
Sukang tuba is drawn from coconut toddy, which is the same sap that becomes lambanog, so the vinegar and the liquor come from one tap and one climb. Vinegar-braising predates Spanish arrival, which makes adobo a technique wearing a borrowed name. In Filipino practice a splash of vinegar is also thrown to appease unseen residents before building. The souring agent is also the offering.
