Context
Jerk was invented by people evading capture. Maroons cooking in the Blue Mountains needed a method that preserved meat and produced little visible smoke, and that constraint produced the pit, the pimento wood and the spice paste. It is now a jar on a shelf described as a Caribbean flavour. Its actual subject is escape, and the technique still carries the conditions it was designed under.
