Context
Achiote is on more Western shelves than almost any Indigenous American ingredient, and almost nobody eating it knows the name. It is what makes cheddar orange and butter yellow, sold as a colour additive with a number. In Yucatán it is recado rojo, rubbed into cochinita pibil, and it was Maya body paint before it was either. The commodity kept the pigment and dropped everything else.
