Context
Mojo moved twice, each time with people who had left somewhere. Canarian migrants brought it to Cuba where it met sour orange, and Cuban exiles brought that version to Florida after 1959, where it now marinates most of the pork in Miami. A sauce that follows displacement tends to keep changing, because each arrival has to work with what the new place actually grows.
