Gochujang was made in the first month of the lunar year, on a chosen day, because the cold and the low humidity gave the ferment the start it needed, and the timing was fixed by almanac rather than by convenience. Royal kitchens kept their own recipe. A paste that takes months and a correct starting date is agriculture organised as a calendar rite.
