Context

Zebu is not beef. It is leaner, more heat-tolerant, and distinct in flavor due to different fat distribution. The suya grilling tradition of West Africa and the nyama choma of East Africa are built on zebu. Collapsing it into the generic Western category of beef erases the breed, the pastoral culture, and the Fulani, Maasai, and Bororo cattle-herder communities who shaped these cuisines.
