Context
Kokum is one of India's most geographically specific ingredients: Garcinia indica grows only along the Konkan and Malabar coasts and is foundational to Goan, Konkani, and Malvani cooking. Its near-total obscurity outside India reflects the way regional Indian cuisines are collapsed into a single 'curry' category in Western perception. There is no single Indian cuisine. Kokum is one of the proofs.
