Rite

Kimjang is a season, not a chore. Korean households and neighbourhoods gather in late autumn to make the winter's kimchi together, hundreds of heads of cabbage at a time, and the labour is shared out along lines of family and obligation. UNESCO lists the practice rather than the dish, which is the right emphasis: what is being preserved is the gathering. In Central and Eastern Europe the same vegetable was salted into the same insurance against the same winter.
