Rite

Beetroot bleeds, which is why it does ritual work. Borscht is the centre of the Ukrainian and Eastern European table and of a genuine argument about whose dish it is, and a meatless version is served at the Polish and Ukrainian Christmas Eve vigil. Aphrodite was said to have eaten beets for beauty. A root that stains everything it touches was read as blood by every culture that grew it.
