Two designations do most of the work here and they are routinely confused. Aceto Balsamico Tradizionale di Modena DOP is cooked grape must alone, aged a minimum of twelve years and twenty-five for extravecchio. Aceto Balsamico di Modena IGP is a blend that may be mostly wine vinegar and needs sixty days. The supermarket bottle is not an imitation operating outside the system: it is protected too, under the weaker of the two names. That is the sharper version of the usual complaint. Geographic indication did not fail to keep the mass market out, it issued it a licence.
