Context

Pikliz sits on the table beside griot and accra doing the same job every hot pickle does, and unlike jerk it never got picked up and sold back. Haitian food is largely absent from the global restaurant economy, which has less to do with the food than with how the world has treated Haiti since it won its independence. The pickle is excellent. The market was never neutral.

Pikliz sits beside griot at every Haitian celebration and at Independence Day, when soup joumou is eaten to mark the day enslaved Haitians took a soup they had been forbidden to eat. Haitian food carries a revolution in its calendar in a way few cuisines do. The pickle is the sharp thing on a plate that already means something.
