Context
Scotch bonnet was named by British colonizers for its resemblance to a Scottish tam-o'-shanter cap, but the pepper is Amazonian in origin, arrived in the Caribbean before British colonization, and was integrated into Afro-Caribbean cooking on entirely non-British terms. It is inseparable from jerk seasoning and Caribbean identity. The name is colonial. The food is not.

Rite

The scotch bonnet is dropped into a Jamaican pot whole and taken out before it bursts, so the dish carries the perfume and not the full heat, and bursting it is a cook's error with consequences. It is the required chili of jerk and of pepper pot. Heat used as an aromatic rather than as a test of endurance is a distinction the Caribbean makes and the wing-eating contest does not.
