Rite

Couscous is rolled by hand, by several pairs of hands, and it is the Friday dish across the Maghreb, carried to the mosque and shared, and the dish of mourning and of celebration alike. Amazigh households made it in quantity and dried it for the year. UNESCO listed it as shared heritage of Algeria, Morocco, Tunisia and Mauritania jointly, which settled an argument by refusing to award it to anyone.
